Pink Bubbly Buttercream Frosting

Directions

In a large bowl, with a hand or stand mixer, cream together sugar and butter on low speed. Mix until well blended. Increase speed to medium and beat for another 3 minutes.
Add vanilla, cream and Bubbly continue to beat on medium speed for 1 minute more, adding more Bubbly if needed for desired spreading/piping consistency.
Scoop into a piping bag and pipe decoratively onto cupcakes, or spread onto cupcakes as desired.

I was asked to make cupcakes for a friends bridal shower and decided that spiking the buttercream frosting with some of the Pink Moscato Bubbly would be a nice touch. Drank the rest of the bottle of bubbly while baking and stopped by the liquor store next day to pick up another bottle to bring with me to the shower. The cupcakes and the champagne were both a hit! A few of the girls have begged for my secret spiked buttercream recipe!

Ingredients

3 cups powdered sugar
1 cup butter, at room temperature
1 Teaspoon vanilla extract
1 Tablespoon whipping cream
1 Tablespoon Barefoot Pink Moscato Bubbly
